Rolling Pins & Pastry Mats

There are only a couple of decisions to make when choosing a rolling pin: Do you want handles or a single rod (French rolling pin), and what materials would you prefer it to be made of? Wood is the traditional choice, but you can also choose a pin made of nonstick material, stainless steel, marble, or any one of a number of options. We like the French rolling pins, because they keep you closer to the action and make it easier to roll your dough in a round shape due to the tapered shape.
